Mushroom Poppers
Ingredients:
1 pack of Nutcase Vegan Chorizo
2 packs of Organic Button Mushrooms
1/4 lb wedge of vegan Monterey jack or cheddar
2 jalapeno peppers
2 tbsp olive oil
Recipe
de stem mushrooms, spoon out insides,
Chop up stems and insides, reserve for later cooking
mince jalapeno - seeds optional
dice or shred vegan cheese
chop up thawed chorizo and mix with jalapeno and shredded cheese
Mix all ingredients with 1 tbsp olive oil in bowl
Oil hands and lightly coat outsides of mushrooms with olive oil
Fill mushrooms with Nutcase/Jalapeno/Cheese filling
Bake in over at 375 for 20 minutes
