Mushroom Poppers

Ingredients:

1 pack of Nutcase Vegan Chorizo

2 packs of Organic Button Mushrooms

1/4 lb wedge of vegan Monterey jack or cheddar

2 jalapeno peppers

2 tbsp olive oil

Recipe

  1. de stem mushrooms, spoon out insides,

  2. Chop up stems and insides, reserve for later cooking

  3. mince jalapeno - seeds optional

  4. dice or shred vegan cheese

  5. chop up thawed chorizo and mix with jalapeno and shredded cheese

  6. Mix all ingredients with 1 tbsp olive oil in bowl

  7. Oil hands and lightly coat outsides of mushrooms with olive oil

  8. Fill mushrooms with Nutcase/Jalapeno/Cheese filling

  9. Bake in over at 375 for 20 minutes

  10. serve and enjoy!
