Nutcase Vegan Co-Founders

Hello! We are the Co-Founders of Nutcase Vegan. We are both retired physicians who practiced medicine for over 20 years. We started our business because we wanted to create a healthy vegan product for our family and friends. We were dedicated locavores; after viewing Food Inc in 2010, our daughter announced she was a vegetarian from that day forward. As physicians with teenagers, we sought a healthy, fulfilling meat alternative to recreate our favorite dishes. We crafted a tree nut, brown rice and quinoa based ground “meat” that is made from whole foods, healthy and satisfying.

Guadalupe Diaz

Healthcare worker for over 20 years with training in diabetes management, and healthy cooking classes for different local non-profit organizations, medical interpreter, and a foodie at heart.Diabetes prevention has been one of the reasons that moves me to change my diet and lifestyle, my daughter inspired me to become vegetarian. As a Mexican this has been a challenge since our cuisine has meat in most of our dishes, but I also discover that we can implement many dishes only with vegetables or other supplements and is not expensive at all, in fact it is cheaper way to cook. I am a true believer that we are what we eat, am not a full vegetarian or vegan yet, but I have been able to reduce the meat intake in my diet to once a week and has been a joy to discover the change in my health.

Hi I’m Isabel! I work for Nutcase as a sales representative and graphic designer, creating the website and graphics in addition to facilitating demos of our products. I am an artist and am currently applying for MFA programs for Fall 2023 to expand and strengthen my artistic practice. In the mean time, I am freelance designing websites, working for Nutcase and in 2023 I am going to New Zealand to WWOOF (World Wide Opportunities on Organic Farms) for 12 weeks to learn about sustainable farming, regenerative agriculture and soil ecology.

Rebecca Grau

Hi I’m Rebecca! and I’ve been vegetarian and mostly plant based for about 3 years. I’ve always been a huge animal lover and I found that when I was eating meat it was causing a lot of digestive issues, so I decided to try a vegetarian diet and it’s helped so much that I suggest it to everyone around me. Both of my parents decided to join me on the plant based journey and have loved experimenting with vegetarian and vegan recipes, and have found it’s helped with their health as well! In addition to being an advocate for clean eating I’m a very outdoorsy person and love traveling with my family and friends.
