Vegan Korean “Beef” Lettuce Wraps
Ingredients
1 pack Nutcase Vegan Burgers
¼ cup soy sauce
1/4 cup hoisin sauce
¼ cup rice vinegar
2 tbsp sesame oil
2 tbsp brown sugar
2-4 tbsp sriracha (to taste)
2 tbsp minced ginger
2 tbsp minced garlic
½ cup roughly chopped scallions
Large green leaf lettuce leaves (1 whole head, rinsed)
Sliced fresno chiles or jalapenos
Grated raw carrot
Grated cucumber
Sesame seeds
Avocado oil as needed
Rice noodles - to fry as toppings
In a pan over medium heat, add some avocado oil and your Nutcase Vegan Burgers. Cook for 5 minutes, chopping up patties and making sure they are getting browned on all sides. Once it is to a texture of your liking add in your soy sauce, hoisin sauce, rice vinegar, sesame oil, brown sugar, sriracha, minced ginger, and minced garlic. Stir to combine, raise the heat to high & cook for about 5 minutes until the sauce reduces and thickens.
Roughly chop your scallions, throw those in, reduce the heat to low & cover the pan for 5 minutes to steam them gently. You want them to still have some crunch.
Fry Rice noodles in Avocado Oil- be careful to not burn yourself
Wash and prep all your veggies. Place 2 lettuce leaves together, then fill with your “beef” mixture, and top with mixed cucumber & carrot, red chiles, and sesame seeds. Top with crispy fried noodles!
